Preparation Method :
- Put all the ingredients in the top of a double saucepan or in a bowl standing over a pan of simmering water.
- Heat gently, stirring, for about 20 minutes, until the sugar has dissolved and the mixture is thick enough to coat the back of a spoon.
- Strain, pot and cover the curd.

- Grated rind and juice of 2 large oranges
- Juice of 2 lemon
- 250 grams castor sugar
- 100 grams butter
- 3 egg yolks, beaten
