Preparation Method :
- Heat a frying pan on a low heat and dry-roast the semolina till golden and the raw smell completely disappears.
- In a kadhai, heat the oil and add the cloves.
- When the cloves sizzle, add the roasted semolina and stir till well mixed.
- Gradually whisk in the hot milk, raisins and cashew nuts, and continue stirring till all the milk has been absorbed by the semolina.
- Mix in the sugar and cook till it dissolves and the semolina begins to leave the sides of the pan.
- Mix in the saffron-flavoured milk and cardamom powder, cover and cook for 1 minute. Remove from heat and serve hot.
INGREDIENTS
- 300 grams semolina
- 3 tablespoons sesame oil
- 5 cloves
- 500 ml hot whole milk
- 2 teaspoon raisins, soaked
- 10 cashew nuts, broken and lightly roasted
- 200 grams sugar
- A few saffron strands, soaked in 1 tablespoon warm milk
- 1 teaspoon green cardamom powder
