Preparation Method :
- Mix the besan and the maida together.
- Heat the ghee in a pan.
- Add the maida and roast on low heat until it is golden in color.
- Cool a little and keep stirring occasionally.
- Make syrup of sugar, water, milk and saffron strands.
- Pour this sugar syrup into the maida mixture.
- Beat it well with a large fork until the mixture makes thread like flakes.
- Transfer all the mixture into a greased surface and then roll it into one inch thickness.
- Add the cardamom seeds and melon seeds. Push it down with the help of your palms.
- Cut the flattened mixture into one inch squares when cool.
- Wrap all the pieces separately with a thin polythene sheet.
- Store the soan papdis in a sealed container.

- 300 grams Besan Flour
- 250 grams Maida
- 2 tablespoon Milk
- 200 grams Sugar
- ½ teaspoon Cardamom Seeds
- 2 teaspoon Dried Melon Seeds
- 1 Sliver warq
- 250 grams Ghee
