COTTAGE CHEESE BLINTZES

- Cook the pancakes as in recipe. Make the filling by blending the cheese, egg yolk and vanilla together.
- Fill the pancakes with the cheese mixture, tuck in the ends and roll up. Chill until required.
- Heat the butter and oil in a heavy-based frying pan (skillet) and add the blintzes, seam-side down.
- Fry until golden brown, then turn carefully and fry the other side.
- Serve at once, with a bowl of sugar and cinnamon mixed together and a jug of sour cream.
INGREDIENTS
- 8 small pancakes, about 6 inches in diameter
- 30 gram butter
- 1 tablespoon Cooking oil
Filling:
- 400 gram cottage cheese, drained
- 2 egg yolk
- 1 teaspoon vanilla essence
