Preparation Method :
- Sift the flour into a bowl and add the yogurt, yeast and enough cold water to form a batter of double cream consistency.
- Cover and leave in a warm place for about 4-6 hours to ferment.
- Dissolve the sugar with the water in a pan over a low heat with the saffron, cardamoms and cloves. Bring to the boil and cook to produce a heavy syrup. Set aside.
- Heat the vegetable oil in a large pan. Pour the batter in a steady stream through an icing bag, to form coil shapes in the hot oil.
- Make a few coils at a time and cook for about 1 minute, turning, until they are light brown and crisp.
- Remove the coils from the pan with a slotted spoon, drain on kitchen paper, then immerse in the sugar syrup for about 3-5 minutes.
- Remove them from the syrup; drain and dust with icing sugar. Serve warm and crisp.

- 500 grams granulated sugar
- 500 ml water
- 350 grams plain flour
- 150 grams natural yogurt
- 2 tablespoon dried yeast
- Pinch of saffron
- 6 cardamom pods
- 6 cloves
- Cooking oil, for deep-frying
- Icing sugar, to dust
