Preparation Method :
- Soak the tapioca in warm water for at least an hour so the grains swell, Drain and keep it aside.
- Put the measured water in a pan and bring to the boil. Stir in the sugar and salt.
- Add the tapioca and coconut milk and simmer for 10-12 minutes or until the tapioca turns transparent.
- Serve warm with some tropical fruits and decorate with the finely shredded lime rind.
INGREDIENTS
- 150 grams tapioca
- 500 ml water
- 175 grams granulated sugar
- Pinch of salt
- 250 ml coconut milk
- 250 grams prepared tropical fruits
- Finely shredded rind of 1 lime, to decorate
