CARROT-CASHEW PAYASAM

Preparation Method :
- Soak the cashew nuts in 1 cup warm milk for half an hour.
- Boil the milk in a heavy-bottomed pan. Keep stirring till it reduces to half.
- Fry the grated carrot in ghee for about 5 minutes.
- Grind to a coarse paste the soaked cashewnuts and the fried carrot.
- Add to the milk. Mix in the sugar and simmer till ingredients are well blended.
- Stir in the crushed cardamoms.
- Serve chilled.
INGREDIENTS
- 75 grams cashew nuts
- 200 ml warm milk for soaking the cashew nuts
- 1½ litres milk
- 500 grams grated carrot
- 2 tablespoon ghee
- 100 grams sugar
- 6 green cardamoms, crushed
