CHANA DAL LADDOOS

Makes :

Preparation Method :

  • Divide whole cashew nuts into 1 and roast in ghee
  • Soak saffron of boiling milk and crush well
  • Powder cardamom.
  • Add 300 ml of water to the sugar and boil until it dissolves. Remove the scum in a strainer. Boil it until it becomes syrup of one string consistency. Remove from the heat and add the saffron and the crushed cardamom. Set aside.
  • Add enough water to the Chana dal flour to make a thick batter of dropping consistency.
  • Heat oil and drop a ladleful of batter thorough a draining spoon. Fry until uniformly golden and crisp.
  • Add these 'boondis', to the sugar syrup. Add the fried cashew nuts, and cardamom powder mix well and cool. Roll into lemon-sized balls and store in a Tupperware container.

INGREDIENTS

  • 600 grams of Chana dal flour 
  • 800 grams of Sugar 
  • 4 tablespoons Cashew nuts 
  • 4 tablespoons Cardamom 
  • Saffron a few
  • 350 ml of Water 
  • IDHAYAM Mantra Peanut Oil for frying

    the recipe given is for boondi ke ladoo but the picture is of besan ladoo.. I think it needs correction.

    I think Moni hazra says correct how bundi will disolve in sugar syrup to make a fine powder for laddoo.

    both types are made from same process one is bundi and other is plain atta of chana dal rest process and ingredients are same this is a dish in 2 wyas regularly prepared in pinjabi cuisine and oil used can be substituted by Pure Ghee (cow ghee)

    Also on top of ladoo it is decorated with pista..but in ingredient it is not present.
