Preparation Method :
- Place the milk and cardamoms in a large heavy pan. Bring to the boil then simmer vigorously until reduced by one-third.
- Strain the milk into a bowl, discard the cardamoms, and then stir in the sugar and almonds until the sugar is dissolved.
- Pour the mixture into a freezer proof container, cover and freeze until almost firm, stir every 20 -30 minutes.
- When almost solid, pack the ice cream into yogurt pots. Return to the freezer until required.
- Remove the pots about 10 minutes before serving and turning the individual ices out.
- Decorate with toasted almonds and cardamoms before serving.
INGREDIENTS
- 2 liters creamy milk
- 12 cardamoms
- 150 grams castor (superfine) sugar
- 25 grams blanched almonds, chopped
- Toasted flaked almonds and cardamoms, to decorate
