Preparation Method :
- Roast the puffed lotus seeds till they start to change colour. Let them cool. Crush half of them, leaving the other whole.
- Boil milk. When the milk starts to boil, add the lotus seeds and cook on medium heat, stirring every now and then.
- Cook till the lotus seeds are cooked and the consistency of the milk reduced by one third.
- Add sugar and sprinkle crushed cardamom. Continue cooking for a couple of minutes. Remove from heat.
- Add kewra water. Transfer the kheer to a serving dish. Decorate with vark and chopped pistachios.
INGREDIENTS
- 2 liter milk
- 100 grams puffed lotus seeds - roast for 2 minutes in a pan
- 100 grams sugar
- ½ teaspoon green cardamom powder
- 3 tablespoon screw pine flower water
- 1 tablespoon chopped green pistachios
- 3 sheets silver leaf (vark)
