Preparation Method :
- Put the milk in a heavy-based pan, simmer for about 10-12 minutes.
- Add the carrots and raisins, cook for an hour or until the milk has dried off.
- Keep stirring and make sure that the milk doesn't stick to the bottom and burning.
- Stir in the sugar and cashew nuts, mix thoroughly and cook for another 10-15 minutes or until the sugar has dissolved and until the mixture comes together.
- Serve at room temperature.
INGREDIENTS
- 750 grams carrots, peeled and grated
- 1 tablespoon raisins
- 1 litre semi-skimmed milk
- Sugar to taste
- 25 grams cashew nuts, dry-roasted and halved
