CITRUS FRUIT SALAD
This is a very appetizing and refreshing salad, with a typical Indian combination of citrus fruits seasoned with salt and pepper. It will provide the perfect ending to a heavy meal.

Preparation Method :
- Use a sharp knife to cut a thin slice of peel and pith from each end of an orange.
- Place the cut side down on a plate, and cut off the peel and pith in strips. Remove any remaining pith.
- Cut out each segment leaving the membrane behind. Squeeze the remaining juice from the membrane. Repeat with the other orange.
- Cut the honeydew melon in half and scrape out the seeds using a spoon. Remove the seeds from the watermelon in the same way.
- Use a melon bailer to scoop out the flesh into balls or a knife to cut it into cubes.
- Use a sharp knife to take two thick slices from either side of the large flat stone (pit) of the mango without peeling the fruit.
- Make slices into the flesh and then turn the skin inside out. The slices of flesh can be easily cut off.
- Place all the fruit in a large serving bowl and add the lemon juice.
- Toss gently to prevent damaging the fruit.
- Mix the remaining ingredients and sprinkle over the fruit. Gently toss, chill thoroughly, and serve.
INGREDIENTS
- 2 navel oranges
- 1 honeydew melon
- ½ watermelon
- 1 fresh mango
- 150 grams seedless green and black grapes
- 250 grams canned mandarin segments, drained
- 250 grams canned grapefruit segments, drained
- Juice of 1 lemon
- Salt and ground black pepper
- ½ teaspoon sugar
- ¼ teaspoon freshly ground cumin seeds
