MANGO AND COCONUT STIR FRY

Preparation Method :
- Drain the milk and remove the flesh. Peel with a vegetable peeler so that it forms coconut flakes.
- Peel the mango. Cut the stone out of the middle of the fruit. Cut each half of the mango into slices.
- Place the mango slices in a bowl and pour over the lime juice and rind. Set aside.
- Meanwhile heat a karahi or wok with 2 teaspoon of the oil. When the oil is hot, add the butter.
- Once the butter has melted, stir in the coconut flakes and stir-fry until the coconut is golden brown. Remove and drain on kitchen paper.
- Wipe out the pan. Strain the mango slices, reserving the juice.
- Heat the pan again and add the remaining oil. When the oil is hot, add the mango and stir-fry for 2 minutes, then add the juice and leave to bubble and reduce for 1 minute.
- Stir in the honey. When it has dissolved, spoon the mango and coconut dessert into individual serving dishes. Sprinkle on the coconut flakes and serve with creme fraiche or ice cream.

- 2 tablespoon clear honey
- Crème fraiche or ice cream, to serve
