FRIED PINEAPPLE
A very simple and quick dessert in which fresh pineapple is fried in butter, brown sugar, and limejuice, and sprinkled with toasted coconut. The slightly sharp taste of the fruit makes this a very refreshing treat at the end of a rich meal.

Preparation Method :
- Use a sharp knife to cut the top off the pineapple and peel off the skin, taking care to remove the eyes.
- Cut the pineapple in half, and remove and discard the woody core. Cut the flesh lengthways into 1 cm / ½ inch wedges.
- Heat the butter in a large, heavy frying pan or wok. When it melts, add the pineapple wedges and cook over medium heat for 1 - 2 minutes on each side, or until they have turned pale golden in colour.
- Meanwhile, dry-fry the desiccated coconut in a small frying pan until lightly browned. Remove the pan from the heat and set aside.
- Sprinkle the soft light brown sugar into the pan with the pineapple, and add the limejuice and cook, stirring constantly, until the sugar dissolves.
- Divide the pineapple wedges among four bowls, sprinkle with the coconut, decorate with the lime slices, and serve with the yogurt.

- 1 pineapple
- 3 tablespoons butter
- 1 tablespoon desiccated (dry unsweetened shredded) coconut
- 4 tablespoons soft light brown sugar
- 4 tablespoons fresh lime juice
- Lime slices, to decorate
- Thick and creamy natural (plain) yogurt, to serve
