Preparation Method :
- Sift the self-raising flour, the rice flour and the salt together into a bowl. Add enough of the water to make a smooth, coating batter. Mix well, then stir in the lime rind.
- Peel the bananas and dip them into the batter two or three times. Heat the oil, Deep-fry the battered bananas in the hot oil until crisp and golden.
- Drain and serve hot, dredged with sugar. Offer the lime wedges to squeeze over the bananas.
INGREDIENTS
- 150 grams self-raising (self-rising) flour
- 50 grams rice flour
- ½ teaspoon salt
- 250 ml water
- Finely grated lime rind
- 9 small bananas
- Cooking oil for deep-frying
- Castor (superfine) sugar and 1 lime cut in wedges, to serve
