CARROT AND NUT DESSERT

Preparation Method :
- Place the carrots, milk, nuts, raisins, cinnamon and cardamom in a large heavy-based saucepan. Cook for about 25-30 minutes stirring frequently.
- Add the cream and continue stirring over a low heat. Reduce the carrot mixture until there is no moisture present.
- Stir in the ghee and combine well for about 8-10 minutes. Add the sugar and stir for a further 5 minutes. Remove from the heat and drizzle with saffron milk.
- Serve hot in individual bowls topped with chopped pistachios and fresh creme fraiche.
INGREDIENTS
- 1 kg carrots, grated
- 220 ml single cream
- 100 grams ghee
- 50 grams granulated sugar
- 1 litre whole milk
- 1 tablespoon flaked almonds
- 4 teaspoon ground almonds
- 2 teaspoon raisins
- ½ teaspoon ground cinnamon
- 1 teaspoon saffron threads, soaked in 3 tablespoons warm milk
- 3-4 cardamom pods, finely crushed
- 2 tablespoon unsalted pistachios, finely chopped
- Creme fraiche
