APRICOT CHUTNEY

Chutneys can add zest to most meals, and in India, you will usually find a selection of different kinds served in tiny bowls for people to choose. Dried apricots are readily available in supermarkets and health food shops.
Makes :
2 cups

Preparation Method :

  • Put the dried apricots and garam masala into a medium pan and add sugar, malt vinegar, ginger, salt, sultanas, and water. Mix thoroughly with a spoon.
  • Bring to boil, then reduce the heat and simmer for 30 - 35 minutes, stirring occasionally.When the chutney has thickened to a stiff consistency, spoon it into 2 - 3 clean jam jars and leave to cool. This chutney should be stored in the refrigerator.

INGREDIENTS

  • 450 grams dried apricots, finely diced
  • 1 teaspoon garam masala
  • 300 grams sugar
  • 450 ml malt vinegar
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon salt
  • 75 grams sultanas (golden raisins)
  • Water
