MUTTON PODIMAS

Preparation Method :

  • The Tempering: Put the oil in a wok over medium heat. When the oil is hot add the tempering ingredients, over medium heat, till the seeds are brown.
  • Add in the onions, green chili and remaining turmeric powder. Cook stirring for about a minute till onions are soft.
  • Add the meat and pan-fry for about 3 minutes, till browned, stirring. Break up the lumps if any.
  • Mix in the remaining spice powder Cover and cook for a couple of minutes. Stir in salt, cover and cook for another 5 minutes.
  • Blend in the cooked dhal. Cover and cook for few more minutes. Add coconut and stir well. Serve hot.

INGREDIENTS

  • 120 grams finely chopped onions
  • 3 garlic cloves, finely chopped
  • 1 green chili, chopped
  • 490 Grams mutton, minced or ground
  • 1 teaspoon garam masala powder
  • 75 grams chana dhal, rinsed, soaked, drained, cooked with half of the turmeric, but not mashed
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 30 grams shredded fresh desiccated coconut
  • ½ teaspoon cumin powder
  • Salt, to taste

Tempering

  • 1 tablespoon ghee
  • 1 tablespoon Cooking oil
  • Few curry leaves
  • 1 bay leaf
  • 3-4 cinnamon sticks
  • 1 teaspoon cumin seeds
  • ½ teaspoon fennel seeds
