Preparation Method :

  • Aappam batter : Grind both the rice with dhal and fenugreek in about 2 cups of water to make a fine, thick batter.
  • Add salt and mix well. Pour the batter into a bowl, cover and leave to ferment overnight. Stir and set aside.
  • Sweet syrup : Add all the ingredients and mix well.
  • The Aappam : Put the wok over medium heat. Smear it with a piece of cloth dipped in a little oil.
  • Pour spoonful of batter in the centre of the hot wok. Tilt the wok quickly, holding it with the handles to coat the sides with batter. Swirl the batter around the wok so that it is evenly spread.
  • Cover and cook over low heat for 2 minutes. When cooked, the centre of the aappam will be spongy and the edges, thin. Lift it off the wok.
  • Make all the aappam in the same way, smearing the wok with a little oil before pouring in the batter.
  • Place the sweet milk syrup in a bowl and let the warm aappam soak in for few minutes before serving.

INGREDIENTS

  • 100 grams extra long-grained rice, rinsed, soaked and drained
  • 100 grams parboiled rice, rinsed, soaked and drained
  • 30 grams urad dhal, rinsed, soaked and drained
  • 2 teaspoon fenugreek seeds, rinsed, soaked and drained
  • Salt, to taste
  • 2 tablespoon of Cooking Oil

Sweet Syrup

  • 800 ml coconut milk
  • 200 grams sugar
  • A few saffron strands
  • ½ teaspoon powdered green cardamom
