Preparation Method :
- Heat the oil in a heavy pan and fry the onion seeds for about 30 seconds.
- Add the sliced onion and fry for 5 minutes, stirring occasionally. Then add the sliced tomatoes and peppers, ginger, garlic and chilli powder. Stir-fry for 2 minutes.
- Add the fresh coriander, potato, peas and salt, stir-fry over a medium heat for at least 5 minutes.
- Drain the rice thoroughly, add it to the spiced tomato and potato mixture and stir-fry for further 2 minutes.
- Pour in the water and bring to the boil, then lower the heat to medium. Cover and cook the rice for 15 minutes. Leave to stand for some time and then serve.

- 50 grams frozen peas
- 1 medium onion, sliced
- 2 medium tomatoes, sliced
- 1 medium potato, diced
- 1 orange or yellow pepper, seeded and sliced
- 1 tablespoon Cooking oil
- ½ teaspoon onion seeds
- 1 teaspoon grated fresh root ginger
- 1 teaspoon crushed garlic
- 1 teaspoon chili powder
- 750 ml water
- 2 tablespoon chopped fresh Coriander
- Salt to taste
