MUTTON BIRYANI

Preparation Method :

  • Mix the drained mutton with the spice paste, salt, yogurt and juice of a lime. Marinate it for about an hour.
  • Heat the oil and add the cinnamon, cloves, cardamoms, bay leaves and peppercorns. After a few seconds add the onions and fry till golden.
  • Then add the marinated mutton and fry, stirring continuously till the contents come to a boil.
  • Cook on medium flame for about 10 minutes or until the meat is well fried and browned.
  • Add the soaked rice to the mutton and fry at least for 2 minutes. Add water 1½ inches above the surface of the meat and rice.
  • Add in the ghee and when the water starts to boil, cover and cook on dum for about 20 - 22 minutes till the meat is tender and the rice is done. Serve hot.

INGREDIENTS

  • 500 grams long grain rice, rinsed, soaked and drained
  • 1 kg mutton, from the goat's shoulder, cut into medium sized pieces, washed and drained
  • 2 large onions, finely sliced
  • 175 grams yogurt, beaten
  • Juice of 1 lime
  • 1 tablespoon ghee
  • 120 ml IDHAYAM Sesame oil
  • Salt, to taste

Ground to paste

  • 1 small bunch fresh green coriander
  • 45 grams green chillies
  • 1 tablespoon green papaya paste
  • 1 pod garlic
  • 75 grams curry leaves
  • ½ teaspoon turmeric powder
  • 1 inch cinnamon sticks
  • 6 cloves
  • 2 bay leaves
  • 2 black cardamoms
  • 4 green cardamoms
  • 1 teaspoon peppercorns
