CHICKEN BIRYANI

Preparation Method :

  • Marinate the chicken with spice paste and salt for about an hour.
  • Heat the oil in a heavy bottomed pan. Add the cardamoms, cinnamon, cloves, bay leaves and cumin seeds with salt, sauté for a few seconds and add in the marinated chicken.
  • Keep stirring till the contents come to a boil. Cook further till the oil starts to surface and the chicken turns golden brown.
  • Add the soaked rice to the chicken and fry for 2 minutes. Add water. Make sure to come above 1 inch the rice and chicken.
  • Add 1 tablespoon ghee. When the dish starts to boil, simmer to low flame and cook covered for about 20 minutes or until the chicken and rice are done. Serve hot.

INGREDIENTS

  • 1 chicken, cut into 10-12 pieces, washed and drained
  • 750 grams long grain rice, rinsed, soaked and drained
  • 4 green cardamoms
  • 1 inch cinnamon sticks
  • 6 cloves
  • 2 bay leaves
  • 1 teaspoon cumin seeds
  • 1 tablespoon ghee
  • 75 ml Cooking oil
  • Salt, to taste

Ground to fine paste

  • 25 grams green chilli paste
  • 6 onions, ground
  • 1 tablespoon ginger paste    
  • 1 tablespoon garlic paste
  • 200 grams yogurt, whisked
  • 2 teaspoon pepper powder
  • 50 grams poppy seeds(khus khus), finely ground
