LASSI
In India, lassi is not only made at home, but is also sold at roadside cafes, restaurants, and hotels. There is no substitute for this drink, especially on a hot day. It is particularly good when served with curries and similar hot dishes as it helps the body to digest spicy food.

Preparation Method :
- Place the natural yogurt in a jug (pitcher) and whisk until frothy. Add the granulated sugar.
- Pour in the measured water and the pureed fruit, if using, and continue to whisk for 2 minutes.
- Taste for sweetness and adjust as necessary.
- Pour the lassi into four serving glasses and serve chilled, decorated with crushed pistachio nuts.

- 300 ml natural (plain) low-fat yogurt
- 1 teaspoon granulated sugar, or to taste
- 300 ml water
- 2 tablespoons pureed fruit (optional)
- 1 tablespoon crushed pistachio nuts, to decorate
