CREAM OF PEA SOUP

Cooking Time :
15 minutes

Preparation Method :

  • Put the peas in a blender, add a ladleful of the stock, and process until smooth.
  • Melt the butter in a small pan, add the flour, and cook over low heat, stirring constantly, for 1 minute.
  • Gradually stir in 250 ml of the remaining stock and cook over medium heat, stirring constantly, for 5 minutes.
  • Stir in the pureed peas and remaining stock, reduce the heat, cover, and simmer for 5 -10 minutes.
  • Strain the soup into a clean pan, stir in the yogurt, season to taste with salt and pepper, and heat through.
  • Serve immediately, garnished with croutons and finely chopped dill.

INGREDIENTS

  • 300 gram cooked peas
  • 1 liter vegetable stock
  • 2 tablespoons butter
  • 1 tablespoon all-purpose(plain) flour
  • 120 ml strained plain or thick Greek yogurt
  • Salt and pepper
  • Croutons and finely chopped fresh dill, to garnish
