CREAM OF ASPARAGUS SOUP (GERMAN SPARGELCREMESUPPE)

Preparation Time :
10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Peel and chop the asparagus after removing the woody stems.
  • First sauté the onion in butter and then add potatoes.
  • Add the broth and simmer till the potatoes become tender.
  • Add the asparagus and celery and cook for 5- 7 minutes.
  • Add salt and pepper and blend the mixture in mixer to get the puree.
  • Now add cream to the puree and serve.
  • Serve immediately.

INGREDIENTS

  • 1 chopped onion
  • 1 table spoon butter
  • 1 diced potato
  • 200 ml chicken broth
  • 250 gram fresh asparagus
  • 2 stalks of chopped celery
  • 100 ml of sour cream or milk
  • Salt and pepper as per the taste
