WINTER GOUGERE

Preparation Method :

  • Put the water, butter and a pinch of salt in a large heavy-based pan and bring slowly to the boil - the butter should melt before the water boils.
  • Add the flour all at once and beat vigorously with a wooden spoon over gentle heat until the mixture forms smooth dough which leaves the sides of the pan clean.
  • Remove the pan from the heat and beat in the eggs a little at a time, incorporating each addition before adding any more.
  • Add only as much as the dough will absorb; it should be thick and shiny, not liquid. Reserve a little beaten egg for the glaze.
  • Beat in the cheese, mustard, vegetables, parsley, salt and pepper to taste. Place large dollops of the dough in a well-buttered 23 cm/9 inch circular baking dish, arranging them side by side to fill the dish.
  • Brush top with reserved egg. Bake in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 35 to 40 minutes until golden brown.
  • Serve immediately.

  • 200 grams butter
  • Salt
  • 300 grams plain flour
  • 6 eggs, beaten
  • 100 grams Gruyere cheese, diced
  • 1 teaspoon dry mustard
  • 2 small carrot, grated
  • 2 small parsnip, grated
  • 2 tablespoon chopped parsley
  • Freshly ground pepper
