RATATOUILLE

Preparation Time :
30 minutes

Cooking Time :
40 minutes

Preparation Method :

  • In a saucepan, heat olive oil over medium heat.
  • Add garlic and onions and cook them till they turn light brown in color.
  • Add green pepper, zucchinis and egg plant. Cover and cook for 6- 10 minutes
  • Keep stirring occasionally to keep vegetables from sticking.
  • Now add the tomatoes
  • Five minutes later, check to see if the tomatoes have made enough juice to almost cover the vegetables. If not, add water as needed
  • Add salt, pepper and Herbes de Provence to taste.
  • Cover and cook over low heat about 20-25 minutes, until eggplant is tender but not too soft.
  • Serve it with rice or French bread. 

INGREDIENTS

  • 3 tablespoon Cooking oil
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 eggplants (chopped) 
  • 2 green bell pepper (chopped)
  • 4 zucchinis (courgettes) (chopped)
  • 8 tomatoes (peeled and diced)
  • Salt and pepper as per taste 
  • 1 teaspoon Herbes de Provence to taste (thyme, oregano, parsley, basil)
