SEARED KIWI, ORANGE AND WHITE CHOCOLATE PARTY MILLE-FEUILLE

Preparation Method :

  • Preheat oven to 180°C / 350°F /Gas mark 4.
  • Divide puff pastry into 3 equal blocks and roll out each thinly to equal rectangles.
  • Top Layer: Bake the pastry for 7-10 minutes or until golden brown without dusting with icing sugar and chill for half an hour.
  • Dust one thick layer of icing sugar, heat a metal skewer until very hot and mark a crisscross pattern in the sugar, reheat skewer if needed.
  • Bake the remaining pastry rectangles for 5-7 minutes, remove from oven and dust with more icing sugar.
  • Bake pastry for 5 more minutes or until the pastry is risen and golden brown. Transfer to a wire rack and allow to cool.
  • The Filling: Bring cream to the boil, remove from heat and stir in white chocolate until just melted. Allow to cool, stirring occasionally.
  • When thick enough to spread, whisk for a minute or until light and creamy.
  • Split each pastry rectangle in half horizontally and spread chocolate cream over the bases. Top with fruit and pastry top layer and chill until ready to serve.

  • 300 grams puff pastry icing sugar, to dust
  • 145 grams white chocolate, chopped
  • 100 ml double cream
  • 2 kiwi fruit, peeled and sliced
  • 4 oranges, peeled and segmented
