KIWI, ORANGE AND PLAIN CHOCOLATE MILLE-FEUILLES

Preparation Method :

  • Preheat oven to 180°C / 350°F /Gas mark 4.
  • Line a baking tray with baking parchment. Roll out pastry on a board dusted with icing sugar about ¼ inch thick and cut out 12 rectangles.
  • Lift them onto baking tray, dust with icing sugar and chill for half an hour.
  • Bake pastry rectangles for 5-7 minutes, remove from oven and dust with more icing sugar.
  • Bake pastry for 5 more minutes or until the pastry is risen and golden brown. Transfer to a wire rack and allow to cool.
  • The Filling: Bring cream to the boil, remove from heat and stir in dark chocolate until just melted. Allow to cool, stirring occasionally.
  • When thick enough to spread, whisk for a minute or until light and creamy.
  • Split each pastry rectangle in half horizontally and spread chocolate cream over the bases. Top with fruit and pastry lids. Dust with more icing sugar and chill until ready to serve.

  • 300 grams puff pastry icing sugar, to dust
  • 145 grams dark chocolate, chopped
  • 100 ml double cream
  • 2 kiwi fruit, peeled and sliced
  • 4 oranges, peeled and segmented
