Preparation Method :
- Prepare pastry according to recipe. Cut dough in half. Roll out each piece with hands to form a sausage shape.
- Cut each roll into 18 even-sized pieces. Cover to avoid drying. Roll each portion into even-sized rounds with center slightly thicker than edges.
- Combine spinach, pork, salt, pepper, soy sauce, sesame oil and shallots. Divide mixture into 36 portions.
- Place one portion onto each wrapper. Join outer edges of skin over filling to form half circles. Pinch edges together.
- Make a pinch pleat along each side of filling. The dumplings should resemble an apple quarter.
- Heat oil in pan. When hot, reduce to medium heat. Arrange dumplings in rows. Fry until the bottom side is golden.
- Pour in stock. Cover and simmer until most of the liquid is absorbed, 6 - 8 minutes.
- Transfer to platter with the brown side up.
- Serve hot with dip sauce.

- 4 tablespoons light soy sauce
