SPINACH AND CHEESE DUMPLINGS

Preparation Method :

  • Wash the spinach and finely chop the leaves, discarding the stalks. Cook the spinach without added water until just tender, drain well, and process in a blender or food processor, or push through a sieve.
  • Mix together the spinach, ricotta cheese, salt and pepper and nutmeg to taste, egg yolks and half the Parmesan cheese.
  • Drop spoonfuls of the mixture into a little flour spread on greaseproof (waxed) paper. Shape into small balls. Bring a large saucepan of lightly salted water to the boil, add the dumplings and cover tightly.
  • Simmer for 5 minutes, and then remove with a slotted spoon to hot serving plates. Pour the melted butter over and sprinkle with the remaining Parmesan cheese.

INGREDIENTS

  • 500 grams spinach
  • 200 grams ricotta cheese
  • Salt and freshly ground pepper
  • Freshly grated nutmeg
  • 4 egg yolks
  • 8 tablespoons grated Parmesan cheese
  • Flour for coating
  • 100 grams butter
