Preparation Method :
- Finely chop prawns. Place in a bowl with combined sesame oil, egg white, sugar and soy sauce.
- Mix in shallots, mushrooms and water chestnuts.
- Brush a wonton skin lightly with water. Using the left hand, hold thumb and index finger in a circle.
- Cover the circle with one wonton wrapper. Top with a teaspoonful of filling.
- Using teaspoon, press and push the filling and wrapper through the circle to form a drawstring effect.
- Close finger and thumb together to produce a drawstring effect. Repeat with remaining wonton skins.
- Bring to boil water in a work. Line a steamer with outer lettuce leaves.
- Place dim sum on top, allowing space between each one. Place steamer in work, cover, and steam above boiling water for 20 minutes.
- Remove and serve with a dip sauce.
INGREDIENTS
- 1 kg green (uncooked) prawns
- 1 teaspoon Sesame Oil
- 2 eggs white
- 4 teaspoons sugar
- 2 tablespoons soy sauce
- 4 shallots, finely chopped
- 12 Chinese mushrooms, soaked in warm water 20 minutes and chopped
- 10 water chestnuts, finely chopped
- 200 grams wonton skins
