PRAWN DIM SUM

Preparation Time :
30 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Finely chop prawns. Place in a bowl with combined sesame oil, egg white, sugar and soy sauce.
  • Mix in shallots, mushrooms and water chestnuts.
  • Brush a wonton skin lightly with water. Using the left hand, hold thumb and index finger in a circle.
  • Cover the circle with one wonton wrapper. Top with a teaspoonful of filling.
  • Using teaspoon, press and push the filling and wrapper through the circle to form a drawstring effect.
  • Close finger and thumb together to produce a drawstring effect. Repeat with remaining wonton skins.
  • Bring to boil water in a work. Line a steamer with outer lettuce leaves.
  • Place dim sum on top, allowing space between each one. Place steamer in work, cover, and steam above boiling water for 20 minutes.
  • Remove and serve with a dip sauce.

INGREDIENTS

  • 1 kg green (uncooked) prawns
  • 1 teaspoon Sesame Oil
  • 2 eggs white
  • 4 teaspoons sugar
  • 2 tablespoons soy sauce
  • 4 shallots, finely chopped
  • 12 Chinese mushrooms, soaked in warm water 20 minutes and chopped
  • 10 water chestnuts, finely chopped
  • 200 grams wonton skins
