Preparation Method :
- Remove the skin and the seeds from dates, chop dates finely.
- Press lychees gently between sheets of absorbent paper, chop lychees finely.
- Combine dates, lychees, walnuts, lemon rind and juice.
- Place a teaspoon of mixture in centre of each wrapper, gather sides around filling, pinch edges together.
- Heat oil in wok, deep fry Wontons until golden brown. Drain on absorbent paper, dust with icing sugar before serving.

- 24 wonton wrappers
- 250 grams fresh dates
- 400 grams lychees
- 75 grams finely chopped walnuts
- 1 tablespoon grated lemon rind
- 2 tablespoons lemon juice
- Cooking Oil for deep frying
