Preparation Method :
- Combine chicken, fish fillets, celery stalks, shallot, and light soy sauce, salt. Place mixture onto each wonton skin. Brush edges lightly with egg white.
- Fold to form a triangle. Place a dab of egg white on the left front corner of triangle.
- White on the left front corner of triangle. Join the front of the left to the back of the right side of triangle to form a swallow.
- Deep-fry in oil to cover until golden. Serve with sweet and sour sauce.
- To make sauce, combine water, sugar, white vinegar, tomato sauce, corn flour in a saucepan. Beat and stir until boiling.
- Serve in bowls.
INGREDIENTS
- 30 wonton skins
- 2 beaten egg white
- Cooking Oil for deep-frying
Filling
- 200 grams chicken, finely chopped
- 200 grams fish fillets, finely chopped
- 1 stalk celery, finely chopped
- 2 small shallots, finely chopped
- 4 teaspoons light soy sauce
- 1 teaspoon salt
Sweet and sour sauce
- 250 ml water
- 250 ml sugar
- 250 ml white vinegar
- 2 tablespoons tomato sauce
- 2 tablespoons corn flour
