STEAMED MINCED BEEF BALLS

Preparation Method :
- Boil and dice pork fat. Soak tangerine peel in warm water until soft then mash with a mallet.
- Mix beef with salt, sugar and bicarbonate of soda, mix well and set aside for ½ an hour. Put beef in a mixing bowl and pound well.
- Dissolve corn flour in water and pour in solution gradually while pounding the beef.
- Mix well with diced fat, mashed tangerine peel, shallot, sesame paste, pepper and light soy sauce.
- Add oil a little at a time and pound until well mixed. Divide mince beef into small balls.
- Wash and dry bean curd sheet, cut into small pieces and deep-fry. Put two pieces into a small dish with two pieces into a small dish with two meat balls on top.
- Place dishes in steamer. Put steamer above boiling water to steam for 8 - 10 minutes.
