SWEET AND SOUR CAULIFLOWER

Preparation Method :
- Bring a large saucepan of water to the boil. Add the cauliflower to the pan and cook for 2 minutes. Drain the cauliflower thoroughly.
- Heat the oil in a large preheated wok.
- Add the onion and carrots to the wok and stir-fry for about 5 minutes.
- Add the drained cauliflower and mange tout (snow peas) to the wok and stir-fry for 2 - 3 minutes.
- Add the mango and bean sprouts to the wok and stir-fry for about 2 minutes.
- Mix together the coriander (cilantro), lime juice, honey and coconut milk in a bowl.
- Add the coriander (cilantro) and coconut mixture to the wok and stir-fry for about 2 minutes or until the juices are bubbling.
- Transfer the sweet and sour cauliflower stir-fry to serving dishes.
- Serve immediately.
INGREDIENTS
- 750 grams cauliflower florets
- 4 tablespoons IDHAYAM sesame oil
- 1 onion, sliced
- 500 grams carrots, sliced
- 200 grams mange tout (snow peas)
- 2 ripe mangos, sliced
- 200 grams bean sprouts
- 6 tablespoons chopped fresh coriander (cilantro)
- 6 tablespoons fresh lime juice
- 2 tablespoons clear honey
- 10 tablespoons coconut milk
