DEEP-FRIED SAVORY TRIANGLES

Preparation Method :

  • To make pastry, sift wheat starch into a bowl, pour in boiling water, stir immediately.
  • Sift glutinous rice flour onto a clean table, add enough water to combine and mix well. Knead wheat starch dough with glutinous rice flour dough and sugar till soft.
  • Divide dough into three portions. Steam two portions only for 5 minutes. Allow to cool. Take out and knead the three portions together till smooth.
  • To make filling, wash dried prawns and turnips, soak for 30 minutes and dice.
  • Heat a pan, add all remaining filling ingredients. Add seasonings, stirring corn flour solution to make gravy.
  • Roll and cut the dough into 32 equal parts. Press into thin rounds and put in 1 heaped teaspoon off filling.
  • Fold and pinch edges together securely to form a frilly edge.
  • Deep-fry in warm oil until golden brown. 

INGREDIENTS

Pastry

  • 100 grams wheat starch 
  • 100 ml boiling water
  • 200 grams glutinous rice flour
  • Cold water
  • 100 grams sugar 
  • 100 grams butter

Filling

  • 200 grams dried prawn meat
  • 6 tablespoons preserved turnip
  • 2 tablespoons Cooking Oil
  • 250 grams pork mince
  • 2 small carrots, diced
  • 4 Chinese mushrooms soaked in warm water for 20 minutes
  • 6 shallots, chopped

Seasonings

  • 2 teaspoons wine
  • 2 teaspoons soy sauce
  • 4 teaspoons oyster sauce
  • 1 teaspoon spicy salt
  • 4 teaspoons sugar
  • Pinch pepper
  • 2 teaspoons Sesame Oil
  • 4 teaspoons corn flour mixed with
  • 5 teaspoons water
