Preparation Method :
- Dissolve dried yeast in water and leave for 15 - 20 minutes in a warm place. Pour solution into flour and knead to form soft dough. Cover and set aside in a warm place for 12 hours.
- To make outer dough, put yeast dough in a mixing bowl, add sugar, butter, vinegar and water to mix.
- Sift in flour and baking powder, and knead into a soft dough until dough springs back when pressed. Prove for 45 minutes or until doubled in size.
- To make inner dough, sift flour on to a clean table and knead with butter to make dough. Cut into 20 equal portions.
- Punch down outer dough and knead again. Roll into a sausage shape and cut into 20 equal portions. Place one portion of inner dough inside one portion of outer dough.
- Knead by rolling into a thin strip. Repeat until mixed then roll into a small round. In each round insert one teaspoon lotus seed paste.
- Put a piece of paper on the bottom of each bun. Prove in warm place for 15 minutes or until doubled. Put in steamer to steam over high heat for 8 minutes.

- 2 teaspoons dried yeast
- 250 ml warm water
- 500 grams sieved plain flour
Outer dough
- 500 grams prepared yeast dough
- 150 grams sugar
- 20 grams butter
- 1 teaspoon vinegar
- 5 tablespoons water
- 250 grams plain flour
- 2 teaspoons baking powder
Inner dough
- 500 grams flour
- 100 gram butter
Filling
- 100 grams lotus seed paste
