Preparation Method :
- Clean and scale fish, brush all over outside with egg, and dust with corn flour.
- Heat oil in wok, add fish, fry gently on both sides until golden brown; discard oil.
- Transfer the fish to greased baking dish, bake in moderate oven about 20 minutes or until fish is just tender, turn once after about 10 minutes.
- Cut carrot, pepper and onion into thin strips. Heat extra oil in wok, add carrot and onion, stir-fry 3 minutes, add pepper, and stir-fry 2 minutes.
- Blend 1 tablespoon of corn flour with water, sauces, sugar and vinegar, add to wok, stir until mixture boils and thickens, pour over fish, sprinkle with shallots.

- 1 kg whole snapper
- 1 egg, lightly beaten
- 75 grams corn flour
- 75 ml Cooking oil
- 1 large carrot
- 1 small green pepper
- 1 onion
- 150 ml water
- 1 teaspoon light soy sauce
- 2 tablespoons tomato sauce
- 2 tablespoons sugar
- 2 tablespoons brown vinegar
- 2 green shallots, chopped
