SCALLOP PANCAKES

Preparation Method :
- Using a sharp knife, trim the green beans and slice them very thinly.
- Using a sharp knife, deseed and very finely chop the red chili.
- Bring a small saucepan of lightly salted water to the boil.
- Add the green beans to the pan and cook for 3 - 4 minutes or until just softened.
- Roughly chop the scallops and place them in a large bowl. Add the cooked beans to the scallops.
- Mix the egg with the spring onions (scallions), rice flour, fish sauce and chili until well combined.
- Add to the scallops and mix well. Heat oil in a large preheated wok.
- Add a ladleful of the mixture to the wok and cook for 5 minutes until golden and set.
- Remove the pancake from the wok and leave to drain on absorbent kitchen paper (paper towels).
- Keep warm while cooking the remaining pancake mixture.
- Serve the pancakes hot with a sweet chili dip.
INGREDIENTS
- 200 grams fine green beans
- 2 red chili
- 500 grams scallops, without roe
- 2 eggs
- 6 spring onions (scallions), sliced
- 100 grams rice flour
- 2 tablespoons fish sauce
- Cooking oil, for frying
- Salt to taste
- Sweet chili dip, to serve
