FISH WITH BLACK BEAN SAUCE

Preparation Method :

  • Rinse the fish inside and out with cold running water and pat dry with kitchen paper (paper towels).
  • Make 2 - 3 diagonal slashes in the flesh on each side of the fish, using a sharp knife. Rub the garlic into the fish.
  • Mix together the black bean sauce, corn flour (cornstarch), sesame oil, light soy sauce, sugar and dry sherry.
  • Place the fish in a shallow heatproof dish and pour the sauce mixture over the top. Sprinkle the shredded leek and (bell) pepper strips on top of the sauce.
  • Place the dish in the top of a steamer, cover and steam for 10 minutes, or until the fish is cooked through.
  • Transfer the fish to a serving dish, garnish with shredded leek and lemon wedges.
  • Serve with boiled rice or noodles.

INGREDIENTS

  • 1½ kg whole snapper, cleaned and scaled
  • 5 garlic cloves, crushed
  • 4 tablespoons black bean sauce
  • 2 teaspoons corn flour (cornstarch)
  • 4 teaspoons Cooking oil
  • 4 tablespoons light soy sauce
  • 4 teaspoons caster (superfine) sugar
  • 4 tablespoons dry sherry
  • 2 small leek, shredded
  • 2 small red (bell) pepper, seeded and cut into thin strips
  • Shredded leek and lemon wedges, to garnish
  • Boiled rice or noodles, to serve
