PORK AND LETTUCE ROLLS

Preparation Method :
- Drain mushrooms, remove stems and chop mushroom caps finely. Very finely chop water chestnuts, bamboo shoots and shallots. Drain and flake crab.
 - Heat oil in a wok and stir-fry pork until golden. Stir in mushrooms, water chestnuts, bamboo shoots, shallots and crab. Cook 1 minute.
 - Combine sesame oil, soy sauce, oyster sauce and sherry and stir into the mixture.
 - Place the mixture into the canter of each lettuce leaf. Fold in the ends of the lettuce leaf and roll up to form a neat parcel.
 - Generally, meat filling and lettuce leaves are served separately, guests fill and roll their own lettuce leaves.
 
INGREDIENTS
- 50 grams Chinese mushrooms, soaked in warm water 20 minutes
 - 75 grams water chestnuts
 - 100 grams bamboo shoots
 - 5 shallots
 - 300 grams canned crab
 - 4 teaspoons Cooking Oil
 - 200 grams minced pork
 - 2 teaspoons Sesame Oil
 - 4 teaspoons soy sauce
 - 2 teaspoons oyster sauce
 - 2 tablespoons sherry
 - 2 lettuce, washed and dried
