TOFU WITH HOT AND SWEET SAUCE

Preparation Method :
- Pat away any moisture from the tofu (bean curd), using absorbent kitchen paper (paper towels).
- Heat the oil in a large wok or frying pan (skillet) until very hot.
- Add the tofu (bean curd) to the wok and cook in batches for about 5 minutes, or until golden and crispy.
- Remove the tofu (bean curd) with a slotted spoon, transfer to absorbent kitchen paper (paper towels) and leave to drain.
- To make the peanut and chili sauce, mix together the crunchy peanut butter, sweet chili sauce, coconut milk, tomatos puree (paste) and chopped salted peanuts in a bowl.
- Add a little boiling water if necessary to achieve a smooth consistency.
- Stir well until the ingredients are thoroughly blended.
- Transfer the tofu (bean curd) to serving plates and pour the sauce over the top.
- Alternatively, pour the sauce into a serving dish and serve separately.

- 10 tablespoons crunchy peanut butter
- 2 tablespoons sweet chili sauce
- 300 ml coconut milk
- 2 tablespoons tomatos puree (paste)
- 50 grams chopped salted peanuts
