SWEET AND SOUR PORK

Preparation Method :
- Combine pork, salt, flour, sherry and egg yolk in a bowl. Let stand 15 minutes. Roll pork in corn flour just before deep-frying.
- Heat oil in a sauce pan. Add ginger and garlic. And stir-fry 30 seconds.
- Add capsicums and pickles. Blend water, corn flour, sugar, vinegar, tomato sauce and pickle juice.
- Stir into vegetables until mixture thickens. Keep warm.
- Heat deep-frying oil. Cook pork in four batches for 5 minutes each. Remove and drain.
- Reheat oil; refry pork 3 - 5 minutes. Drain well. Arrange on a serving platter.
- Spoon over sauce and serve at once.

- 750 grams lean pork, cut in 2 cm dice
- 1 teaspoon salt
- 2 tablespoons flour
- 2 teaspoons dry sherry

- 8 tablespoons corn flour
- 2 tablespoons Cooking oil
- 2 teaspoons chopped fresh ginger root
- 2 teaspoons chopped garlic
- 1 red capsicum cut in 2 cm dice
- 1 green capsicum cut in 2 cm dice
- 200 grams Chinese mixed pickles, sliced
- 200 ml water
- 2 tablespoons corn flour
- 5 tablespoons sugar
- 5 tablespoons white vinegar
- 5 tablespoons tomato sauce
- 100 ml pickle juice
- 500 ml Cooking oil, for deep-frying
