FRIED SPARE BIBS/LAMB CHOPS

Preparation Method :
- Cut the spare ribs or chops into even sized pieces (1½ " square).
- Chop spring onions, ginger and garlic. Place in a bowl with spare ribs or chops and mix well. Leave to stand for a short while.
- Take a large saucepan with water to boil. Add spare ribs or chops and seasonings and simmer for 10 - 15 minutes.
- Remove spare ribs or chops and drain well.
- Heat oil in a wok and fry spare ribs or chops until golden brown.
- Heat 2 tablespoon oil and fry the shredded spring onions and capsicum.
- Add soya sauce, sesame oil, ajinomoto, salt and sugar. Stir well.
- Add the spare ribs or chops and coat with the sauce. Cook for 5 - 10 minutes to reduce and thicken sauce.
- Serve hot.
INGREDIENTS
- 8 pork spare ribs or lamb chops
- 2 - 3 spring onions - chopped
- 5 thin slices fresh ginger - chopped
- 2 - 3 flakes garlics - chopped
- Cooking oil for frying
Sauce
- 1 spring onion - shredded
- 2 capsicums - shredded
- 2 tablespoons Cooking oil
- 1 tablespoon Sesame oil
- pinch sugar
- 50 ml soy sauce
- 1 teaspoon salt
- A pinch ajinomoto
