FRIED SPARE BIBS/LAMB CHOPS

Preparation Time :
30 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Cut the spare ribs or chops into even sized pieces (1½ " square).
  • Chop spring onions, ginger and garlic. Place in a bowl with spare ribs or chops and mix well. Leave to stand for a short while.
  • Take a large saucepan with water to boil. Add spare ribs or chops and seasonings and simmer for 10 - 15 minutes.
  • Remove spare ribs or chops and drain well.
  • Heat oil in a wok and fry spare ribs or chops until golden brown.
  • Heat 2 tablespoon oil and fry the shredded spring onions and capsicum.
  • Add soya sauce, sesame oil, ajinomoto, salt and sugar. Stir well.
  • Add the spare ribs or chops and coat with the sauce. Cook for 5 - 10 minutes to reduce and thicken sauce.
  • Serve hot.

INGREDIENTS

  • 8 pork spare ribs or lamb chops
  • 2 - 3 spring onions - chopped
  • 5 thin slices fresh ginger - chopped
  • 2 - 3 flakes garlics - chopped
  • Cooking oil for frying

Sauce

  • 1 spring onion - shredded
  • 2 capsicums - shredded
  •  2 tablespoons Cooking oil
  • 1 tablespoon Sesame oil
  • pinch sugar
  • 50 ml soy sauce
  • 1 teaspoon salt
  • A pinch ajinomoto
