Preparation Method :
- Heat oil. Add onions, stir-fry 2 minutes. Add tomatoes, sugar and salt. Stir-fry 1 minute.
- Cover and cook until tomatoes are just tender and retain shape. Remove to a bowl.
- Heat remaining oil; add black beans, ginger and garlic. Stir-fry 1 minute.
- Add beef and cook over high heat until color changes, 2 - 3 minutes.
- Add soy sauce, tomato mixture and beef stock.
- Stir in blended corn flour and stock to thicken, with out breaking tomato pieces.
- Serve garnished with shallot greens.
INGREDIENTS
- 6 tablespoons Cooking oil
- 4 medium onions, finely shredded
- 6 large tomatoes, skinned, cut in eights
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 tablespoons black beans, chopped
- 2 teaspoons chopped fresh ginger root
- 2 teaspoons chopped garlic
- 750 grams grilling steak cut in thin strips
- 4 tablespoons soy sauce
- 300 ml beef stock
- 2 tablespoons corn flour blended with stock or water
- Shallot greens, sliced
