CANTONESE BEEF

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat oil. Add onions, stir-fry 2 minutes. Add tomatoes, sugar and salt. Stir-fry 1 minute.
  • Cover and cook until tomatoes are just tender and retain shape. Remove to a bowl.
  • Heat remaining oil; add black beans, ginger and garlic. Stir-fry 1 minute.
  • Add beef and cook over high heat until color changes, 2 - 3 minutes.
  • Add soy sauce, tomato mixture and beef stock.
  • Stir in blended corn flour and stock to thicken, with out breaking tomato pieces.
  • Serve garnished with shallot greens.

INGREDIENTS

  • 6 tablespoons Cooking oil
  • 4 medium onions, finely shredded
  • 6 large tomatoes, skinned, cut in eights
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 2 tablespoons black beans, chopped
  • 2 teaspoons chopped fresh ginger root
  • 2 teaspoons chopped garlic
  • 750 grams grilling steak cut in thin strips
  • 4 tablespoons soy sauce
  • 300 ml beef stock 
  • 2 tablespoons corn flour blended with stock or water 
  • Shallot greens, sliced
