SPINACH AND BEAN CURD SOUP

15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Wash the spinach, trim away the stalks, and roughly chop the leaves. Cut the bean curd into ⅜ inch (1 cm) cubes. Finely chop the spring onions (scallions).
  • Bring the stock to a boil. Put in the tamari sauce, spinach, bean curd and spring onions (scallions). Simmer 5 minutes.
  • Serve as soon as possible so that the spinach retains its bright green colour.

INGREDIENTS

  • 250 grams spinach
  • 300 grams bean curd
  • 4 spring onions
  • 850 ml stock
  • 2 tablespoons tamari or shoyu sauce
