HOT AND SOUR SOUP

Preparation Method :

  • Soak the mushrooms in hot water 30 minutes. Drain them, and cut them into thin shreds. Finely chop the bean curd and the spring onions (scallions). Cut the bamboo shoots into thin shreds.
  • Put the arrowroot in a bowl. Add the pepper. Gradually mix in the tamari or shoyu sauce, vinegar and 4 tablespoons of the stock.
  • Put the remaining stock in a saucepan and bring it to a boil. Put in the mushrooms, cover and simmer 5 minutes.

INGREDIENTS

  • 4 Chinese dried mushrooms
  • 285 grams pounds bean curd
  • 4 spring onions
  • 55 grams bamboo shoots
  • 1 tablespoon arrowroot
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons tamari or shoyu sauce
  • 2 tablespoons white wine vinegar
  • 850 ml vegetable stock
  • 15 grams ginger root, peeled and grated
  • 2 tablespoons Szechuan pickled vegetables (optional)
  • 2 eggs, beaten
