CRAB AND SWEET CORN SOUP

Preparation Method :
- Heat oil in wok. Add ginger and crab-meat, stir - fry 2 minutes. Add stock, sherry and sweet corn.
 - When boiling, stir in blended corn flour and water to thicken. Remove from heat.
 - Pour in egg white in a thin stream.
 - Garnish with shallots.
 
INGREDIENTS
- 2 tablespoons Cooking oil
 - 1 teaspoon chopped fresh ginger root
 - 2 liters fish stock, seasoned
 - 2 tablespoons dry sherry
 - 500 grams crabmeat, flaked
 - 250 grams sweet corn
 - 2 tablespoons corn flour blended with
 - 4 tablespoons stock or water
 - 4 eggs whites, lightly beaten chopped shallots, to garnish
