Preparation Method :
- Heat oil in saucepan, add pork and abalone and cook over high heat until meat changes color. Drain discarding any excess oil.
- Combine reserved abalone liquid stock, sherry and soy sauce and bring to the boil.
- Add ginger and bamboo shoot, reduce heat and simmer for 2 minutes.
- Add pork and abalone and heat through. Slice shallot to form flower shapes, for garnish.
- Serve hot with chili sauce separately if liked.

- 4 tablespoons Cooking oil
- 200 grams lean pork cut in 2.5 cm dice
- 200 grams canned abalone, cut in 2.5 cm dice, reserve liquid
- 2 liters chicken stock
- 4 tablespoons dry sherry
- 4 tablespoons soy sauce
- 2 teaspoons shredded fresh ginger root
- 100 grams canned bamboo shoot, diced
- 2 shallots, to garnish
- Chili sauce (optional)
